IGN posted a nice and juicy article about the PS2’s DVD features.
Here's a slice:

Sony has confirmed that the system is as function as any of the high-end, stand-alone DVD players currently on the market. "So, can I do the cool things I did with the Matrix movie on my PS2?" According to Sony, in a word, "Yes."

Multi Language Voice Tracks: You can watch the DVD movie of your choice in several languages, including English, Spanish, French, German and Japanese, or whatever other languages the movie-maker has included on the DVD.

Multi Language Sub-titles and Close Captioning: Movies in foreign languages that have subtitles will indeed have subtitles in text on the PS2.

Multi Angle Playback: You can watch the DVD movie from different angles, but only when the DVD is programmed to do so. This function is most common DVDs such as live concerts and, um, porn. It can also be used for hidden goodies, such as the "How the movie was made features" found in DVD version of The Matrix.
